Recipes From The Pacific Area

These recipes came from an old cookbook I found at a flea market. There was no publishing date. I will continue to add recipes until all are entered.



Curry Cheese Biscuits

1/2 c. flour
2 tsp. curry powder
1/2 tsp. baking powder
4 tbsp. butter or margarine
1 egg yolk
1/2 to 3/4 c. grated cheese
1/4 tsp. salt
1/4 tsp. dry mustard
2 tbsp. milk

Sift dry ingredients together. Add the cheese and butter, stiring thoroughly. Add all the rest of the ingredients. Form into dough and let rest about 10 minutes. Roll out on floured surface 1/2 inch thick or less. Cut as desired. Put on buttered baking sheet, bake for 5-7 min. at 400 degrees.

Roast Pork

4 lb. lion pork
1/2 c. wine vinegar
salt and pepper to taste
1 tsp. cornstarch
1 can tomato sauce
1 tsp. brown sugar, melted
1 c. sliced pineapple
1/4 tsp. cinnamon

Cut all the fat from the pork roast and place it bone side down in pot. Cover and roast, 350 degrees, for about 2 hours. Mix the tomato sauce, salt and pepper, vinegar, melted sugar and cornstarch. About 1/2 hour before serving, baste with this mixture, about four times, adding water if needed. Decorate with the pineapple slices and sprinkle with cinnamon.

New Zeland:

Orange Nut Bread

3/4 c. flour
2 eggs
1 tsp. salt
2 tbsp. butter
1/4 c. chopped nuts
1/2 c. sugar
1/4 c. milk
4 tsp. baking powder
peel of 1 orange, chopped

Blend sugar and eggs; sift the dry ingredients and add to the eggs and sugar alternately with the milk. Mix in the orange and nuts. Bake in 350 degree oven 45-50 minutes.
