Recipes From the Caribbean

These recipes came from an old cookbook I found at a flea market. There was no publishing date. I will continue to add recipes until all are entered.


Rice with Mushrooms

1/2 lb. mushrooms
1 c. uncooked regular white rice
salt and pepper to taste
salad oil
1/2 lb. diced lean pork
1 tbsp. snipped scallions
1 clove garlic, peeled and minced
1 green pepper
3 frankfurters

Cut up mushrooms, pouring 2 1/2 c. hot water over them. Heat salad oil in skillet and add diced pork. Sprinkle with scallions, salt and dried thyme. Add minced garlic to skillet. Cook, stirring often, until golden. Add mushrooms in their liquid and bring to a boil. Add halved green pepper and rice. Cover, cooking over low heat, stirring occasionally, 15-20 minutes, until all liquid is gone. Add sliced frankfurters to rice mixture and cook uncovered for about a minute. Serve at once.

Skillet Chicken

1 - 2 1/2 - 3 lb. fryer, cut up
1 c. chicken broth
2 - 3 onions, peeled and sliced
1 large tomato, quartered
2 tbsp. lemon juice
salt and pepper to taste
1/4 c. flour
3 tbsp. butter

Toss chicken pieces with lemon juice, salt, pepper, and flour until coated. Brown chicken and onions in butter. Add chicken broth and tomato and simmer, covered, until chicken is tender.
