Recipes From Africa


These recipes came from an old cookbook I found at a flea market. There was no publishing date. I will continue to add recipes until all are entered.
....Enjoy!




Guinea:

Meat In One Soup

2 lbs. spinach, fresh or frozen
1 tablespoon. fat (from ham)
1 onion, chopped
salt and pepper to taste
1/8 tsp. thyme
1/2 lb. lean baked ham, cubed
10 shallots, chopped
1/2 lb. shrimp, cooked and shelled

Cook spinach for five minutes, drain, set aside and cool. Reserve water it was cooked in. Sauté onions, shallots, salt, pepper, and thyme in ham fat (in skillet). Add ham and the shrimp. Cook five minutes. Pour half the water in which spinach was cooked into skillet mixture. Heat to boiling and then add cooled and drained spinach. Heat, covered, a couple of minutes. Serve hot.

South Africa:


Hamburger Pie
(Fruit Bread)

3 lbs. chuck beef, ground 1 1/2 c. chopped onion 3 tbsp. butter or oleo 1 egg 1 or 2 tbsp. curry powder 2 tsp. salt 2 tbsp. lemon juice 1/4 c. blanched almonds 2 lemons, sliced lemon leaves 3 bay leaves 2 pimiento strips 2 c. fresh bread crumbs 1/2 c. milk

Sauté onion in butter until golden. Soak the bread crumbs in milk. Mix the ground chuck, egg, onion, curry powder, salt, lemon juice, almonds, and bread-crumbs. Place bay leaves on bottom of 10" pie pan. Arrange the meat mixture on top, patting it to fit pan. Bake at 350 degrees for 1 hour, draining off any excess moisture. Garnish with lemon slices and leaves, and pimiento strips.

Sudan:


Chicken-Potato Skillet Dish

1 - 2 1/2 lb. broiler-fryer; cut up salt and pepper to taste 2 onions, sliced 3 tbsp. butter or margarine 6 - 8 medium potatoes, pared 1/3 c. canned tomato paste 2 cloves garlic, minced

Salt and pepper chicken. Sauté chicken pieces, onion, and garlic in butter until golden. Mix tomato paste and 1 1/2 c. water. Add to chicken and bring to boil then simmer for 20-25 minutes. Add potatoes, simmering 30 minutes, or until potatoes and chicken are tender.
