Recipes From The Far East
These recipes came from an old cookbook I found at a flea market. There was no publishing date. I will continue to add recipes until all are entered. ....Enjoy!

China:
Egg Foo Young
1/2 lb. meat in strips
8 eggs
2 tsp. sugar
1/4 bunch celery
salt to taste
2 tbsp. soy sauce
3 heaping tbsp. oil
2 scallions or 1 onion
1/4 lb. bean sprouts
Beat eggs with salt. Slice scallions or onion and celery diagonally into thin strips approximately 1 inch long. Add meat to heated oil in skillet. Then add celery, bean sprouts, and scallions or onion. Stir for another minute. Add soy sauce and sugar; stir. Cook one minute, and then remove from pan.

Ceylon
Curried Rice
2 c. rice
1 onion, diced
3/4 tbsp. curry powder
1 tbsp. flour
salt and pepper to taste
1/2 c. butter or margarine
1 1/2 tsp. lemon juice
1 c. stock
Cook rice. Keep it warm. Melt half the butter or margarine and add onion and saute for about five minutes. Add curry powder, flour, salt and pepper. Add this mixture to rice and keep warm. Melt remaining butter or margarine, adding stock and lemon juice. Heat thoroughly and pour over rice.

India
Beef Curry
1 lb. steak (round), cubed
enough flour to cover steak
2 c. diced onions
1 tsp. curry powder
1 c. boiling water
salt and pepper to taste
1/4 c. fat or oil
1/2 minced garlic
1 beef bouillon cube
1/2 c. tomato juice
Flour beef and brown in 2 tbsp. of fat. Add 2 tbspj. fat, onions, garlic. Saute lightly. Sprinkle curry over all, add bouillon to water and stir in. Cover. Let simmer slowly for 1 1/4 hours or until done. Add water if necessary. Add tomato juice and chill thoroughly. Serve over rice. Salted nuts, shredded coconut, canned chunk pineapple, bannana, crisp bacon bits, orange rind, ets... are delicious when sprinkled over the top.
